Celiac.com - Celiac Disease & Gluten-Free Diet Support Since 1995
My Long Journey to Celiac Disease Diagnosis
Like many people, I spent a lot of years, a lot of dollars, and endured many tests and misdiagnoses, before doctors finally discovered that I had celiac disease (also known as coeliac disease or celiac sprue), and needed to eliminate gluten and all gluten-containing ingredients from my diet. Gluten is a protein found in the three main gluten-containing grains: wheat, rye, and barley; and is often hidden in processed foods, and things like soy sauce and beer.
Celiac disease is NOT an Allergy
It's important to know that celiac disease is an autoimmune disease, not a wheat allergy. It's also different from non-celiac gluten sensitivity, gluten intolerance, or sensitivity to gluten.

Gluten after all?
@Femke, and @AshyCo Do you have anemia? Anemia, Diabetes, and Thiamine Deficiency each will cause false negatives on Celiac blood tests. Have you thought about getting a DNA test done? One doesn't have to be consuming gluten for a DNA test which looks for the most common genes for Celiac Disease. A positive DNA test and positive response... -

I think I need to stop eating in restaurants
I stopped eating out 5 years ago….sadly. I have a friend who owns a number of successful restaurants in NYC. Many years ago at my behest, he completed Columbia Celiac Center’s “training” and developed beautiful menus at his restaurants. HOWEVER, he feels that mistakes will happen in a busy kitchen no matter how hard they try, no matter how much they train. ... -
